INSULIN RESISTANCE AND SOUTH BEACH DIET

Day 4, Phase 1 (July 29, 2010)

This morning my bathroom scale registered at 142 lbs. That is an average of 1-2 lbs a day being lost. I believe this is the norm during the 1st week. After the Phase 1 period the loss will be on the average of 1 or 2 pounds a week.

Dr. Agatston in his book "The South Beach Diet"writes: "One side effect of excess weight, we now know, is an impairment of the hormone insulin's ability to properly process fuel, or fats and sugars. This condition is commonly called insulin resistance. As a result, the body stores more fat than it should, especially in the midsection."

He further writes: "Decrease the consumption of those "bad" carbs, studies showed, and the insulin resistance starts clearing up on its own. Weight begins a fairly rapid decrease, and you begin metabolizing carbs properly. Even the craving for carbs disappear once you cut down on their consumption. Finally cutting out processed carbs improves blood chemistry, ultimately resulting in lowered triglycerides and cholesterol."

I guess this is the reason for the drastic weight loss that I experienced these past three days. I had an insulin resistance syndrome and by totally fasting on the "bad" carbs for 3 days caused the dramatic loss of fat in my mid-section. At the speedy rate my waist line is being restored to its ideal measurement, I might just be able to fit into my denims and old pants two days from now.

So what did I have for my meals today?

I don't mind having omelets for breakfast. It is the only way I can eat eggs minus the bread. But the omelets should have meat and vegetables in them. For today I combed the fridge for left over foods that I could use. I found the pork tenderloin steak and some steamed veggies so I mixed them with two whole eggs. Presto, I now have a delicious omelet.



The other day I was looking for the ready-to-cook Monterey beef teriyaki fare at the super-market but they only had the pork teriyaki. So my lunch today consisted of that and 2 servings of sauteed bean sprouts.



For dinner I had the left over pork teriyaki plus a plateful of salad greens consisting of romaine lettuce, cucumber, bell pepper, hard boiled eggs, onions, tomatoes and pineapple tidbits. I cheated relative to the last one - the pineapple. All fruits are not allowed during the Phase 1 period. For my salad dressing I used the one I bought from Sonya's Garden.

Tomorrow I will be going to Tagaytay with some friends to do an ocular visit on a certain retreat house where we plan to have a seminar/workshop. I hope we could find a resto which serves South Beach friendly fare for Phase 1 dieters like me.
